A British Christmas tradition is for children to leave a mince pie and a drink at the fireplace for Father Christmas. A carrot is usually left for the reindeer. This tradition is to thank Father Christmas for filling the stockings. Mince pie is generally made by cooking dried apples and raisins with spices then filling individual pie crusts and adding a pastry star to the top of each one. They are cooked until the crust is golden brown and the filling is bubbly. Three spices are essential to mince pie. Cinnamon, cloves, and nutmeg represent the three gifts given to the Christ child by the Magi. This was my first attempt at making mince pie and I was delighted at how pretty they turned out and how delicious they tasted! photograph copyright Renee Trenholm
